Inspired by Baked By Melissa's Green Goddess Salad
For the Salad:
2 bundles of Romaine, chopped into bite-sized pieces
1 large cucumber, diced
1/4 cup of Chives, chopped
1 bundle of Green Onions or Scallions, chopped
For the Dressing:
1 cup of Basil Leaves
1 cup of Spinach Leaves
1 small Shallot
Juice of 2 Lemons or 1 large lemon
1/4 cup of Olive Oil - I used lemon-infused olive oil
1/4 cup of Nuts of your choice
1/3 cup of Nutritional Yeast
1 teaspoon of Salt
2 tablespoons of Vinegar - I used Meyer Lemon Honey Vinegar
Add all chopped salad ingredients to a large bowl.
Blend all dressing ingredients in a blender until smooth.
Toss the salad in the dressing and that's legit it! Bottoms up!
