Bottom-Friendly Green Goddess Salad

Inspired by Baked By Melissa's Green Goddess Salad


Ingredients:


For the Salad:

  • 2 bundles of Romaine, chopped into bite-sized pieces

  • 1 large cucumber, diced

  • 1/4 cup of Chives, chopped

  • 1 bundle of Green Onions or Scallions, chopped


For the Dressing:

  • 1 cup of Basil Leaves

  • 1 cup of Spinach Leaves

  • 1 small Shallot

  • Juice of 2 Lemons or 1 large lemon

  • 1/4 cup of Olive Oil - I used lemon-infused olive oil

  • 1/4 cup of Nuts of your choice

  • 1/3 cup of Nutritional Yeast

  • 1 teaspoon of Salt

  • 2 tablespoons of Vinegar - I used Meyer Lemon Honey Vinegar


Instructions:

  1. Add all chopped salad ingredients to a large bowl.

  2. Blend all dressing ingredients in a blender until smooth.

  3. Toss the salad in the dressing and that's legit it! Bottoms up!
